Ingredients:
1lb ground chicken
1/4 cup roasted red bell peppers, diced
1 egg
1/2 cup bread crumbs
1 tbsp parsley, finely chopped
1 tsp minced garlic
Salt & pepper
Combine ingredients in a bowl, starting with half the bread crumbs. Mix thoroughly, slowly adding more bread crumbs until it becomes thick enough to mold into small balls.
Form the mixture into meatballs, about the size of your palm. It should make 10-12 meatballs.
Set them aside to rest, or they can be refrigerated for up to two days, or wrapped and frozen.
When ready to cook. Preheat air fryer to 400. Cook for 11 minutes, flipping halfway through.
If baking them, preheat over to 400. Bake 12-15 minutes, flipping halfway. They are done when the internal temperature reaches 165 degrees Fahrenheit.
Toast the pita bread and top with meatballs, feta cheese, lettuce, tomatoes and tzatziki sauce.
I like to serve it with hummus and veggie sticks also!
