More fresh produce from the garden turned into a beautiful summertime salsa.
3-4 fresh tomatoes (Hot house, roma or burger variety)
1-2 jalapeno peppers
1 bunch cilantro
1/4 cup white onion
1 lime
Salt & pepper
Dice up the tomatoes and onions, and add them to a bowl.
For the jalapenos, remove the seeds if you like it less spicy. Dice those as well. Add to the bowl.
Chop up a few sprigs of cilantro, and add it to the bowl.
Juice the lime over the top of the diced produce.
Add salt and pepper to taste.
Use an immersion blender to slightly blend the salsa to your desired consistency, or leave it as is if you prefer a chunky salsa.
Use the salsa for everything!! Tacos, eggs, chips...my husband is lucky I don't just lick it out of the bowl.
